Coconut Shrimp with Sweet Dipping Sauce
Ingredients
- 1 lb. medium Shrimp
- 1 C. all-purpose flour, divided
- 1/3 C. Beer
- 1/4 tsp. baking powder
- 1/4 tsp. Paprika
- 1/4 tsp. Curry Powder
- 1/8 tsp. salt
- 1/8 tsp. Ground Red Pepper
- 8 oz. Flaked Coconut
Directions
Peel and de-vein shrimp leaving tails intact. Combine 3/4 C. flour, beer and next 5 ingredients stirring until smooth. Dredge shrimp in remaining 1/4 C. flour, dip in batter and coat with coconut. Fry shrimp in hot oil until coconut is golden, turning once. Serve with sweet dipping sauce.

1/3 c. sour cream
1/3 c. crushed canned pineapple
Mix all ingredients together and dip shrimp in it.
