Coconut Shrimp with Sweet Dipping Sauce

There is nothing more indulgent than the combination of beer-battered shrimp and coconut. Delicious!

Ingredients

  • 1 lb. medium Shrimp
  • 1 C. all-purpose flour, divided
  • 1/3 C. Beer
  • 1/4 tsp. baking powder
  • 1/4 tsp. Paprika
  • 1/4 tsp. Curry Powder
  • 1/8 tsp. salt
  • 1/8 tsp. Ground Red Pepper
  • 8 oz. Flaked Coconut

Directions

Peel and de-vein shrimp leaving tails intact. Combine 3/4 C. flour, beer and next 5 ingredients stirring until smooth. Dredge shrimp in remaining 1/4 C. flour, dip in batter and coat with coconut. Fry shrimp in hot oil until coconut is golden, turning once. Serve with sweet dipping sauce.
