Ingredients

  • 3 C. all-purpose flour
  • 2 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 C. unsalted butter, softened
  • 1/2 C. coconut oil
  • 2 eggs
  • 3/4 C. coconut flakes, toasted
  • 1 1/2 C. granulated sugar
  • Coating:
  • 1/4 C. granulated sugar
  • 1 Tbs. ground cinnamon

  1. Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.

  2. Mix together flour, cream of tartar, baking soda, and salt.

  3. In another bowl, beat together butter, coconut oil, and 1 1/2 cups of sugar until fluffy (about 3 minutes).

  4. Beat in eggs and combine with the sugar and butter mixture.

  5. Beat in flour mixture. When flour is fully combined, mix in coconut flakes by hand.

  6. In a small bowl, combine the 1/4 cup sugar and cinnamon.

  7. Roll balls of dough in thr cinnamon sugar mixture and place on the baking sheet, about 2 inches apart.

  8. Bake for 8 minutes.
