  • 1 box chocolate cake mix
  • 2 eggs
  • ¼ C. water
  • ½ C. vegetable oil
  • 1 ½ C. sweetened flaked coconut
  • Store bought vanilla frosting

Preheat the oven to 350 degrees. Combine the chocolate cake mix, eggs, water and vegetable oil. Scoop 2 T. of the batter onto a greased cookie sheet. You should have about 14-16 cookies.. Bake for 10 minutes. Meanwhile, make the filling by combining the vanilla frosting and sweetened flaked coconut. Remove the cookies. Let them cool on a wire rack. Spread the frosting onto 7-8 cookies. Place another cookie over the filling. Enjoy!
