  • 9 sm. cod fillets
  • 1 slice white bread, soaked in water and squeezed dry
  • 1 Tbs. butter
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 C. stock
  • 1 Tbs. dry white wine
  • 1/2 black truffle, sliced thin
  • 1 Tbs. butter
  • 1/2 Tbs. flour
  • 1/2 lb. mushrooms
  • 2 Tbs. butter

Chop 1 fillet and mix together with bread, butter, salt and pepper. Spread mixture over one side of each fillet. Roll fillets and spear through with toothpicks. Place in well-greased baking dish. Add stock and wine, cover baking dish and bake in oven at 375 degrees for 15 minutes. Remove fish from baking dish and keep warm. Add truffle, 1 Tbs. butter and flour to pan gravy. Mix well and cook until slightly thickened. Fry mushrooms in 2 Tbs. butter for 10 minutes and arrange around fish. Pour sauce all over and serve.
