  • 1 lb. cod fillet
  • 1/2 tsp. salt
  • 1/2 tsp. white pepper
  • 2 egg whites, lightly beaten with fork
  • 2 C. heavy cream

Finely chop the fish and strain. Add salt and pepper. Add egg whites, 1 tsp. at a time, blending in each teaspoonful completely before adding the next. Chill in refrigerator for 2 hours. Add cream to fish slowly, mixing with wooden spoon constantly. Pour into well-greased mold, place mold in pan of water in oven at 375 degrees fir 45 minutes. Remove from oven and allow mold to stand in water 5 minutes longer. Turn mold upside on serving dish and unmold.
