Coddled Duck Eggs

Ingredients
- 6 oz. chorizo sausage, minced
- 4 oz. Fontina cheese, grated
- 4 Tbs. butter
- 6 oz. heavy cream
- 2 tsp. nutmeg
- 4 duck eggs
- salt/pepper to taste
- serve with toast points
Directions
Preheat oven to 425 degrees. In a small bowl, mix sausage and cheese. Grease/butter 4 1-C. ramekins. Divide sausage cheese mixture among ramekins. Next, divide heavy cream into ramekins. Dust with nutmeg. Break 1 duck egg into each ramekin. Cook ramekins in middle of oven for 7-10 minutes until set. Salt and pepper to taste.
