Coffee ice cream might not be the flavor you usually pick, but this recipe will make you think differently about it. The sweetness from the wafers and vanilla ice cream make this a tasty treat to be enjoyed throughout the year. Top with fresh raspberries for even more sweetness.

  • 26 vanilla wafer cookies, broken into pieces
  • 26 chocolate wafer cookies, split in half
  • 3 Tbs. unsalted butter, melted
  • 2 qts. coffee ice cream, slightly softened
  • 2 1/4 cups vanilla ice cream, slightly softened
  • Raspberries, for topping

Blend cookies in processor until finely ground. Add melted butter and process until crumbs are moistened. Press crumb mixture onto bottom of rectangular pan. Freeze until firm.

Place 1 quart of coffee ice cream mixture over crust-lined pan. Smooth top.

Layer chocolate wafer cookies on top of coffee ice cream.

Place vanilla ice cream on top of wafers. Lay down another layer of chocolate wafer cookies and finish with the remaining quart of coffee ice cream. Smooth or make wave designs with fork.

Freeze ice cream cake overnight. Top with raspberries before serving.
