Coffee Can Pumpkin Bread

When you don't have loaf pans, coffee cans will do the trick. This large pumpkin bread recipe makes enough for 4 coffee cans...and the bread ain't bad either.

Ingredients

  • 3 C. sugar
  • 3 1/2 C. all-purpose flour
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 4 eggs
  • 2 C. or 1 can pumpkin
  • 1 C. oil
  • 1 C. water
  • 1 C. raisins
  • 1 C. nuts, chopped
  • 2 tsp. nutmeg
  • 2 tsp. cloves
  • 2 tsp. allspice
  • 2 tsp. cinnamon

Directions

Mix all dry ingredients. Mix in all liquid ingredients. Stir until smooth. Grease and flour 4 1-lb. coffee cans. Fill half full with batter. Bake at 325 degrees for 1 hour.

  • No offense, but, did you mean 3 cups of sugar and not flour. I don't think this recipe calls for 6 1/2 cups of flour.
