Ingredients

  • 1 ½ cups of sugar, divided
  • 2 cups of heavy cream
  • 4 eggs yolks
  • 2 tablespoons of instant coffee
  • 1 teaspoon of vanilla

As the oven preheats to 300 degrees, whisk together the egg yolks and sugar until smooth. Set aside and stir together the heavy cream, instant coffee, and vanilla in a separate bowl. Slowly pour the coffee mixture into the egg yolks and fold together until smooth. Next, pour the batter into small ramekins until it is ¾ of the way filled. Place the ramekins into a pan filled with about 4 cups of water. Bake for 45 minutes and set aside to cool and solidify. Then, turn on the oven broiler to low and sprinkle 1 tablespoon of sugar evenly on top of each Crème Brulee. Return the Brulee to the oven and cook an additional 5 minutes, or until the tops caramelize. Serve while hot!
