  • 4 C. extra-strong caffe espresso
  • rind of 1/2 orange
  • rind of 1/2 lemon
  • 3 Tbs. granulated raw sugar
  • 1/2 C. apricot brandy

Make the coffee. Cut the rinds into very thin slivers. Pour the hot coffee over them, cover and let steep for about 15 minutes. Add the sugar. Stir well. Freeze for about 1 1/2 hours. Remove from freezer before the ice is sold and beat in 1/4 C. of apricot brandy. Return to freezer. When ready to serve, spoon into wineglasses and float 1 Tbs. of the apricot brandy over each serving.
