  • 1 ½ sticks butter
  • 3 bananas
  • 2 eggs
  • 2 ½ cups flour
  • ½ teaspoon salt
  • 1 cup brewed coffee
  • 1 teaspoon cinnamon
  • 1 ½ cups packed brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Preheat the oven to 350 degrees while you cream the brown sugar and butter together in a bowl. In a separate bowl, mash the bananas. Add the bananas, eggs, and vanilla to the butter bowl and then mix until everything is combined. Combine the baking soda, salt, and flour in another bowl. Add half the flour bowl to the banana mixture. Add half the brewed coffee to the banana mixture. Add the remaining flour and then the remaining coffee. Fold in the cinnamon and pour the batter into a greased bread pan. Bake for 1.25 hours.
