  • 2 boneless New York strip steaks
  • 2 tablespoons ancho chile powder
  • 2 tablespoons vegetable oil
  • 1 tablespoon salt
  • 2 tablespoons finely ground coffee beans
  • 1 tablespoon paprika
  • 5 teaspoons brown sugar
  • 1 teaspoon dried oregano
  • 2 teaspoons pepper
  • 1 teaspoon mustard powder
  • 1 teaspoon red pepper flakes
  • 1 teaspoon ground ginger

In a small mixing bowl, mix the ancho chile powder, coffee beans, paprika, pepper, mustard, oregano, brown sugar, red pepper flakes, salt, and ginger. Sprinkle the steaks with additional salt before coating the meat in 5 teaspoons of rub per steak. Chill for 3 hours. After the meat returns to room temperature, cook the meat in a skillet with oil over medium heat for 2 minutes per side. Then cook the steaks in the oven at 400 degrees F for 5 minutes. Slice the steak after it cools for 8 minutes.
