Colcannon (Irish: cál ceannann, meaning "white-headed cabbage") is a traditional Irish dish mainly consisting of mashed potatoes with kale or cabbage. Good with any broiled or barbecued meat or with crisp roast chicken.

Ingredients

  • 1 1/2 lbs. potatoes, peeled and cubed
  • 1 1/2 C. milk (or half-and-half)
  • 1 1/2 C. cooked green cabbage or curly kale, chopped fine
  • 4  Tbs melted butter or margarine, divided
  • 1 Tbs. minced parsley
  • 1 tsp salt, or to taste
  • 1/4 tsp pepper, or to taste
  • 6 green onions, chopped fine
  • Pinch of mace

Directions

Cook potatoes until tender; drain well. Heat milk and on­ions until onions are soft; add to potatoes and beat with mixer until fluffy. Blend in cabbage, 1 tablespoon butter, parsley, salt, pepper and mace. Beat until potatoes and cabbage are fluffy. Pile into warm deep dish; make well in center and pour in remaining 3 tablespoons butter.
