Cold Chicken Primavera
Ingredients
- 2 C. water
- 1 C. diced carrots
- 1 C. broccoli flowerets
- 1 C. rotini pasta
- 1/2 lb. cooked chicken, cut into cubes
- 1/2 C. plain non-fat yogurt
- 2 Tbs. + 2 tsp. light mayonnaise
- 2 Tbs. grated Parmesan cheese
- 1/2 tsp. dried basil
- 1/8 tsp. pepper
Directions
In medium saucepan, combine water and carrots and cook, covered, for 10 minutes. Add broccoli to the carrots and cook 5 minutes longer; drain. Cook pasta according to package directions; rinse and drain. In a large bowl, combine pasta, carrots and broccoli. Toss lightly. In a small bowl, combine chicken, yogurt, mayonnaise, cheese, basil and pepper; mix well. Add to pasta mixture. Toss gently to combine. Cover; chill at least 3 hours.
