Cold soup might sound a little strange, but there’s a reason this traditional soup has thrived through the ages. The thick kefir is tangy and lemony. Combined with the ham, this soup is full of so much flavor you won’t miss the warmth!

  • 3 C. plain Kefir
  • ½ English cucumber, peeled and diced
  • 1 C. deli ham, thick cut and diced
  • 3 Tbs. dill, chopped
  • 1 C. radishes, thinly sliced
  • 1 C. arugula, chopped
  • 2 large carrots, diced
  • ½ lb. red potatoes, diced
  • ½ C. green onion, chopped

In a large bowl, combine the kefir, green onions, and dill. Chill for an hour. Steam the potatoes and carrots until they’re just tender. Put this in a bowl to cool. Add the radishes, ham, cucumber and arugula to the carrot mixture. Pour the kefir mixture over the veggies and stir everything together adding salt and pepper if needed.
