Cold Soba and Cucumber Salad

This Japanese favorite is a perfect light appetizer or side dish for any Asian meal.

  • 8 oz. uncooked soba (Japanese buckwheat noodles)
  • 1 large cucumber
  • 1 Tbs. olive oil
  • 2 tsp. sesame oil
  • 1 Tbs. mild vinegar (i.e. rice or white wine)
  • 2 Tbs. soy sauce
  • 2 Tbs. sesame seeds

Cook the noodles until al dente.  Drain and rinse under cold water until cool. 

Peel the cucumber and quarter it lengthwise.  Cut away any watery seeds.  Cut cucumber into narrow strips, approximately 2 inches long, and place them in a bowl.

Add remaining ingredients and toss together.
