Cold Spinach and Sesame Seeds
- 1 lb. fresh spinach
- 1/4 C. water
- 1 tsp. sesame oil (optional)
- 1 Tbs. soy oil
- 1/3 C. soy sauce
- 1/4 C. rice wine (can substitute any other wine vinegar)
- 1/2 tsp. coarse sea salt
- 1/3 C. toasted sesame seeds
If toasted sesame seeds are not available, toast seeds. Heat small flat pan, add 2 Tbs. oil, toss in sesame seeds. Spin along bottom of pan until somewhat toasted, but don't allow to smoke or burn.
Steam spinach in colander over pot of boiling water for 8 minutes. Remove. Immediately plunge into cold water. Line leaves stacked, into your palm. Roll up till looks in shape like small, upside down yogurt cup. Each person eating will get one serving this size and shape. Place on flat plates, standing up, in refrigerator.
Meantime, put ingredients for sauce into a bowl. If you like the strong sesame flavor of sesame, add the sesame oil. If you want a lighter tasting meal, leave this out. Whisk together.
Take spinach out of refrigerator when pretty cold. Drizzle sauce over the top. Sprinkle toasted sesame seeds liberally over the top.
