Ingredients

  • ¾ cup forbidden rice, uncooked
  • 2 large leaves of kale, finely chopped
  • 1 tbsp lemon juice
  • 1 cup of mushrooms, chopped and roasted
  • 1 squash, roasted and cut into 1-inch slices
  • ¼ cup sliced almonds toasted
  • Dressing:
  • 1 tsp turmeric
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • ⅛ tsp cayenne pepper
  • 2 tsp Dijon mustard
  • juice of 1 large lemon
  • 2 tbsp olive oil
  • 1 tsp maple syrup

Directions

Cook rice according to package directions. Set aside and let cool.
Add the shredded kale to a large bowl and pour 1 tbsp lemon juice on top. Then, gently massage with your hands allowing kale to then become tender.
Next, add the roasted squash and mushrooms, and toasted almonds.
Add in the cooked rice and mix all together until combined.
Mix the dressing ingredients together in a mixing bowl and then pour on top of the salad for taste.
