Talk about the perfect meal to start your day. You can use any color of bell peppers to prepare this delicious meal. Feel free to also add a small amount of Parmesan cheese during the last minute of cooking.

  • 1 bell pepper, color of your choice
  • 4 large eggs
  • sea salt
  • freshly ground black pepper
  • 1 T. olive oil

Take out a large nonstick skillet and heat the oil over medium-high heat. Slice the pepper to create 1/2-inch rings. Remember to discard of the seeds and centers of the pepper. Transfer the pepper rings into the skillet and saute for one minute. Crack one egg into the center of each ring. It is important to pour the egg slowly. Sprinkle salt and pepper over the eggs. Saute for three minutes and then slowly flip each pepper-egg ring over. Cook for one additional minute and serve.
