  • 1 tsp. olive oil
  • 1 T. butter, softened
  • 2 C. Arborio rice
  • ½ C. onion, diced
  • 2 garlic cloves, minced
  • 8 oz. mushrooms, sliced
  • 2 C. vegetable broth
  • 1 tsp. salt
  • ¼ C. Parmesan cheese, grated
  • 2 C. water
  • ½ C. white wine
  • 2 T. parsley

Heat the oil in a pan and sauté the onions, mushrooms, and garlic until browned. Stir in ½ C. of the vegetable broth with the rice for about 5 minutes. Pour the mixture into the crockpot with the water, wine, remaining vegetable broth, and salt. Let it cook for 2 hours or until the liquid has been absorbed. Mix in the Parmesan cheese and butter. When ready to serve sprinkle the Parmesan cheese and parsley.
