  • ½ cup of finely chopped yellow onion
  • 1finely chopped celery
  • 2 garlic cloves, finely chopped
  • 1 tablespoon of thyme
  • 1tablespoon of vegetable oil
  • 2 cups of vegan stuffing mix
  • 4 acorn squash
  • ¼ cup of unsalted butter
  • ½ cup of vegetable broth
  • 3 tablespoon of brown sugar
  • Salt and pepper to season

Preheat the oven at 350F.
Cut the acorn squash in half.
In a sheet pan, place the acorn squash and brush them with the melted butter in the middle. Bake in the oven for 15 minutes.
In a non-stick pan, add a tablespoon of vegetable oil and caramelize the onions and garlic. Add the celery and cook until transparent.
Add the stuffing mix, vegetable broth, and brown sugar and cook for a few minutes until the broth reduces. Season the stuffing with salt and pepper.
Place the stuffing inside the acorn squash.
