  • 1 C. unsalted butter, cut into pieces
  • 2 3/4 C. confectioners’ sugar
  • 1 C. pistachio flour
  • 3/4 C. cake flour
  • 1 tsp. coarse salt
  • 7 egg whites
  • 1 C. Concord grapes, seeded and halved
  • 2 T. dark brown sugar

In a small saucepan, melt butter over medium heat. Cook until light brown. Remove from heat and strain into a small bowl. In a large bowl, whisk together confectioners’ sugar, pistachio flour, cake flour, and salt. Stir in egg whites until well combined. Slowly and steadily pour in butter, stirring constantly. Cover and refrigerate for one hour or up to one week. Preheat your oven to 350°F and grease the inside of a nine-inch tart pan. Spread batter into your prepared pan and sprinkle with grapes. Cover with dark brown sugar and bake for one hour and fifteen minutes. Transfer to a cooling rack for 10 minutes before removing cake from pan. Serve immediately or at room temperature.
