CONTEST WINNER: Fresh Asparagus Quiche
Ingredients
- 1 9-inch pie crust
- 3/4 lb. fresh asparagus
- 3 lg. eggs, beaten
- 1 1/2 C. light cream or milk
- 3/4 tsp. sea salt
- 1 1/2 C. shredded Swiss cheese
- 1 dash nutmeg
Directions
Bake pastry at 450 degrees for 5 minutes.Meanwhile, steam asparagus until just tender. In a medium bowl, combine eggs, cream (or milk), salt and nutmeg. Stir in steamed asparagus. After pastry is baked, reduce oven temperature to 325 degrees. Sprinkle cheese over pre-baked pastry shell. Slowly, pour egg mixture over cheese. Bake 35-40 minutes or until knife inserted comes out clean. Let stand for 10 minutes before serving.
