CONTEST WINNER: Pumpkin Spice Sugar Cookies with Honey Glace Icing

Ingredients
- 3 C. all-purpose flour
- 1 C. granulated sugar
- 1-1/2 tsp. pumpkin pie spice
- 1 C. butter (salted)
- 1 lg.egg
- 1-1/2 tsp. vanilla
- 4 C. powdered sugar
- 5 Tbs. milk
- 5 Tbs. light corn syrup
- 2 Tbs. honey
Directions
Cookies: Line two cookie sheets with parchment paper. Cream butter and sugar until light and fluffy with hand mixer or in stand mixer. Mix in egg and vanilla. In a separate bowl, combine flour and pumpkin pie spice. Then slowly add flour mixture to batter. Roll dough into a 1/4-inch thick sheet, then refrigerate for 20 minutes. Cut shapes, transfer to cookie sheets and bake for 10-15 minutes at 350°F. Cookies are done when edges begin to turn golden-brown. Transfer cookies to racks to cool.
Icing: In a large bowl, mix together powdered sugar, milk, light corn syrup and honey until smooth. Dye icing to the desired colors and spread on cookies with the back of a spoon. For piping icing, add powdered sugar until icing is a thick paste.
