Cookie Cups

Scrumptious "cups" are made from a cream cheese dough and pressed into the shape of mini muffin cups, filled with whatever filling you'd like then capped with a piece of the dough.

Ingredients

  • 1 lb. butter
  • 1/2 lb. cream cheese
  • 5 C. flour
  • Powdered sugar for dusting
  • filling options: poppy seed, almond, prune (lekvar), nut, etc.

Directions

Preheat oven to 350 degrees. Cream butter and cream cheese together. Add flour and mix until well-blended. Divide dough into 3 parts, wrap each in plastic and chill in refrigerator for 2-3 hours. Make "balls" of dough (about 1 Tbs) and press into cups. Fill with 1/2 tsp. of filling, cover cup with thumb-size flattened piece of dough. Bake for 15 minutes or until slightly browned. Dust with powdered sugar.
