This cookie dough sundae is vegan friendly. try freezing it in molds to make cookie dough popsicles.

  • Cookie Dough:
  • 1/3 C. dark chocolate chips
  • 1/2 C. cashews
  • 1/2 C. peanuts
  • 1/2 C. dates
  • 2 Tbs. maple syrup
  • 1 tsp. vanilla extra
  • Ice Cream:
  • 4 frozen bananas, chopped
  • Pinch of salt
  • 6 packets of Stevia
  • 1 tsp. cinnamon
  • 1 C. coconut milk
  • 1/4 C. coconut, shredded

  1. Place all cookie dough ingredients except the chocolate chips into a food processor and blend.

  2. Fold in the chocolate chips and set aside.

  3. In the food processor place ice cream ingredients and blend until smooth.

  4. Add cookie dough mixture into the food processor with the ice cream and pulse.

  5. Remove from food processor and top with 1 Tbs. of chocolate chips, crushed nuts and  shredded coconut and serve.
