Cool and Easy Strawberry Pie

You'll be craving this cold pie on a hot day in July when you need a quick cool down. A fabulous summer dessert.

  • 2/3 C. boiling water
  • 1 pkg. (4 serving size) strawberry Jell-O
  • 1/2 C. cold water
  • Ice cubes
  • 1 8 oz. tub Cool Whip thawed
  • 1 prepared graham cracker crust (6 oz. or 9 inch)
  • Strawberry slices

Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Mix cold water and ice to measure 3/4 C. Add to gelatin, stirring until slightly thickened. Remove any remaining ice. Stir in whipped topping with wire whisk until smooth. Refrigerate 15-20 minutes or until mixture is very thick and will mound. Spoon into crust. Refrigerate 4 hours or over night. Top with strawberry slices.
