Cool-as-a-Cucumber Chicken Salad

This hearty yet light salad is a great lunch

Ingredients

  • 2 C. cubed cantaloupe and/or honeydew melon
  • 1 C. finely chopped cucumber
  • 1 C. finely chopped zucchini
  • 1/4 C. thinly sliced green onions
  • 1/3 C. lime juice
  • 2 Tbs. salad oil
  • 2 Tbs. water
  • 2 Tbs. snipped fresh cilantro or mint
  • 1 Tbs. sugar
  • 1/8 tsp. ground white pepper
  • 4 C. shredded leaf lettuce
  • 2 C. shredded cooked chicken (10 oz.)

Directions

In a large bowl, toss together the cantaloupe, cucumber, zucchini, and green onions. For dressing, in a screw-top jar, combine lime juice, oil, water, cilantro, sugar, and white pepper. Cover and shake well. Drizzle 1/2 C. of the dressing over the melon mixture. Toss lightly to coat. Divide shredded lettuce among four dinner plates. Top with the melon mixture. Arrange chicken around edges of plates. Drizzle remaining dressing over chicken.

Makes 4 main-dish servings.
