  • 5 oz dark chocolate
  • 3 Tbs. water
  • 1 Tbs. rum or brandy (optional)
  • Grated rind of 1 lemon
  • 3 1/2 oz. sour cream
  • 3 1/2 oz .natural yogurt
  • To decorate: Kumquats, sliced, Sprigs of mint

Break up the chocolate into a heatproof bowl. Add the water and either melt very slowly over a pan of gently simmering water or in microwave on full power for 2-2 1/2 minutes. Stir until smooth and allow the chocolate to cool for 10 minutes. Stir in the spirit, if using, and the lemon rind, yogurt, and sour cream. Spoon into four elegant wine glasses and chill until set. Decorate with kumquats and sprigs of mint.
