Cool Chocolate Chip Cookie Ice Cream Sandwiches

- 1 16.5 oz. package Refrigerated Chocolate Chip Cookie Dough, divided into 24 pieces
- 4 C. Chocolate Ice Cream, softened
Preheat oven to 350 degrees. Line a large cookie sheet with parchment paper. Space the cookie dough pieces evenly across the prepared baking sheet. Bake for about 10 minutes or until golden brown. Let cookies cool completely. Spread 2 heaping tablespoons of ice cream across the bottom of half of the cookies. Top each layer of ice cream with one of the remaining cookies facing bottom-side-down, pressing down gently to help sandwich stick together.
