Cool Polenta Recipe
- 2 C. coarse yellow cornmeal
- 1 tsp. salt
- 2 Tbs. margarine
Combine cornmeal with 2 cups of water in a saucepan and whisk until smooth. Place on medium heat and bring to a simmer, whisking frequently. Stir in 5 cups of water, 1 cup at a time, whisking after each cup.
Make sure that the mixture is smooth, then cover and simmer, whisking occasionally, until thickened. This should take about 15 minutes.
When done, stir in margarine until melted. Top with your favorite toppings (i.e. vegetables or cheese) and serve.
