  • 4 chicken breasts, chopped
  • 3 cups penne pasta
  • 1 cup Italian Dressing
  • 2 cups Alfredo sauce
  • ½ cup shredded mozzarella
  • ½ cup shredded provolone
  • ½ cup parmesan
  • 4 Roma tomatoes, seeded and chopped
  • 4 tablespoons chopped basil
  • 1 tablespoon minced garlic
  • 6 tablespoons extra virgin olive oil

Toss chicken breasts with Italian dressing, cover with plastic wrap, and marinate in the refrigerator for at least 2 hours. Preheat your oven to 350. Chop up your tomatoes and basil and lightly toss in a separate bowl with the oil and garlic. Boil your pasta in salted water, and while your pasta is boiling, pan-fry your chicken. Drain your pasta and pour it into a big casserole dish. Pour the Alfredo sauce and chicken over the pasta. Layer the cheeses on top of the casserole and the finally layer the tomato mixture on top. Bake in the oven for 35 minutes or until the cheese is golden brown. Serve with Caesar salad, garlic bread, or both!
