  • 3 pounds sliced yellow onions
  • 2 tablespoons melted butter
  • 2 tablespoons olive oil
  • 10 cups beef broth
  • 2 tablespoons balsamic vinegar
  • 6 toasted baguette slices
  • 8 teaspoons grated parmesan cheese
  • 8 tablespoons provolone cheese
  • Salt and pepper

Put the onion slices in the slow cooker and add the butter, olive oil, and salt and pepper. Stir the onions in the seasoning. Cook on high for 1 hour. Add the broth and balsamic vinegar and stir everything together. Cook on low for 6 hours. Spoon the soup into oven-proof bowls and place a slice of bread over each bowl. Divide the cheese equally among the slices of bread and place the bowls under the broiler, cooking until the cheese begins to brown.
