Make yourself a dang quesadilla, or two, or three! These cheesy delights are spicy with a sweet bite of corn. Serve with guacamole, ranch, or picante sauce.

  • 2 10-inch flour tortillas
  • 1 tablespoon pico de gallo
  • ¼ cup bacon bits
  • ¼ cup black bean and corn salsa
  • 1/3 cup monterrey jack cheese, shredded
  • 1/3 cup cheddar cheese, shredded
  • Softened butter

In a large bowl, toss together the cheeses, pico, and bacon bits. Place a frying pan over medium heat. Lightly butter one side of the tortilla and place on the pan butter side down. Spread a layer of the cheese mixture on the other side of the tortilla. Place another tortilla on top and spread a thin layer of butter over the top side. Cook for 1-2 minutes on each side, remove from heat, and repeat. Cut each quesadilla into quarters and serve with salsa and guacamole.
