Copycat Arby's Potato Cakes

- 2-3 cups of mashed potatoes
- 1 C. of all-purpose flour
- 2 beaten medium eggs
- Salt and black pepper to taste
- 2 Tbsp. of olive oil
Mix the eggs with your mashed potatoes until well-blended. Add the flour and blend well. Add a dash each of salt and pepper. Form the mixture into small potato cakes, each about the size of a drink coaster. Heat up the olive oil thoroughly in a skillet over medium heat. Adding the potato cakes to an unheated pan will cause them to come out greasy.
Fry your potato cakes for about two minute per side, or until they are golden brown. Press each one gently with the back of your spatula to make sure they're cooked all the way through. Remove your cooked potato cakes onto a plate lined with a paper towel to soak up any extra oil.
