Bakers Square is famous for their pies so you know they're darn good. You really can't go wrong with any pie on their menu, but I'm partial to the coconut cream pie.

  • 1 9 in. pie shell
  • 3 C. half and half
  • 2 eggs
  • 3/4 C. white sugar
  • 1/2 C. all-purpose flour
  • 1/4 tsp. salt
  • 1 C. coconut flakes, toasted
  • 1 tsp. vanilla extract
  • 1 C. whipped cream
  • 1 9 in. pie shell

  1. Combine the  half-and-half, eggs, sugar, flour and salt in a saucepan.

  2. Bring to a boil over low heat stirring constantly.

  3. Remove from heat and stir in 3/4 cup of the coconut and the vanilla extract.

  4. Pour into the pie shell and chill until firm.

  5. Add the whipped cream and sprinkle with the remaining coconut.
