These avocado filled egg rolls are just like the ones served at the Cheesecake Factory, just cheaper, faster, and more delicious! In just twenty minutes you can be enjoying these meatless egg rolls as a snack, appetizer, or side.

8 egg rolls


  • 1 C. vegetable oil
  • 3 avocados, halved, peeled, and seeded
  • 1 roma tomato, diced
  • 1/4 C. red onion, diced
  • 2 Tbs. fresh cilantro, chopped
  • juice of 1 lime
  • sea salt and pepper, to taste
  • 8 egg roll wrappers
  • Sauce:
  • 3/4 C. fresh cilantro, loosely packed
  • 1/3 C. sour cream
  • 1 jalapeno, seeded and deveined
  • 2 Tbs. mayonnaise
  • 1 clove garlic
  • juice of 1 lime
  • sea salt and pepper, to taste

Make the cilantro dipping sauce by combining the cilantro, sour cream, jalapeno, mayonnaise, garlic, and lime juice in a blender or food processor. Season with salt and pepper to taste, blend until smooth, and set aside.

In a large skillet, heat the oil over medium high heat. In a bowl, mash the avocados and ad the tomato, red onion, cilantro, lime juice, and salt and pepper to taste. Toss to combine.

One at a time, put the avocado mixture in the center of each egg roll wrapper. Bring the bottom of the wrapper up over the filling tightly. Fold in the sides and continue rolling until the top of the wrapper is reached. Rub the edges of the wrappers with wet fingers to seal. Repeat with the remaining egg roll wrappers and avocado filling.

In batches, add the egg rolls to the skillet and fry for 2 to 3 minutes, or until evenly golden brown and crispy. Serve immediately.
