  • 2 skinless, boneless chicken breasts, sliced in half lengthwise to make 4 chicken breasts
  • 2 eggs
  • 2 C breadcrumbs
  • 2 C flour
  • Olive oil, for cooking
  • 4 burger buns
  • Mayonnaise, as needed
  • Barbecue sauce, as needed
  • 4 leaves of lettuce
  • 8 tomato slices
  • 4 slices mozzarella cheese
  • 1 C shredded cheese blend
  • 8 pickle slices

Beat two eggs in a bowl. In another bowl, pour flour. In a third, pour breadcrumbs.

After you wash your chicken breast, dip both sides into egg. Next take your chicken breast and cover it evenly in flour. Finally, coat both sides with breadcrumbs.

Heat up olive oil in a skillet. Cook chicken breast pieces in oil for 10 to 15 minutes, or until done and golden brown.

Separate 4 burger buns. Spread as much mayonnaise and barbecue sauce as needed on bottom bun. Place a slice of mozzarella cheese on top. Lay your chicken breast piece and top off with lettuce leaf, 2 tomato slices, 2 pickles and shredded cheese.
