  • 3 lb. round center cut roast, boneless
  • 4 chipotle peppers in adobe sauce
  • 1 C. onion
  • 1/4 C. lime juice
  • 1/4 C. tomato paste
  • 4 garlic cloves
  • 1 1/2 Tbs. apple cider vinegar
  • 2 tsp. cumin
  • 2 tsp. sea salt
  • 1 tsp. oregano
  • 1/2 tsp. ground cloves
  • 3/4 C. beef
  • 3 bay leaves

Trim beef of any fat and place in slow cooker. Mix all ingredients except for beef and bay leave in a food processor. Pulse until smooth. Pour sauce over the beef. Add stock and bay leaves to the slow cooker. Cover and cook on high for 4 to 5 hours. Remove beef and shred using two forks. Return meat to the slow cooker and cook for an additional hour, or until perfectly tender. Serve meat in tacos.
