  • 1 fryer chicken, cut into pieces
  • 2 C. buttermilk
  • 2 C. flour
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. cayenne pepper
  • Vegetable oil, for frying

Put the chicken in a large dish. Pour the buttermilk on top and cover. Refrigerate for 1 hour and drain the chicken. Combine the flour, salt, pepper, and cayenne in a plastic bag. Heat oil in a cast iron skillet over medium high. Dredge the chicken pieces in a the flour until coated. Fry for 15 minutes on each side until golden brown. Drain on paper towels and serve.
