  • 2 C. pearled barley
  • 2 cans tomato broth
  • 2 C. water
  • 1 C. tomatoes
  • 1/4 C. tomato paste
  • 2 garlic cloves, minced
  • 1 C. onion
  • 1/2 C. red bell pepper
  • 1/2 C. Swiss chard
  • 1/4 tsp. salt
  • 1 Tbsp. sugar
  • 1/2 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 1 tsp. cilantro
  • 1/4 C. Romano cheese

Slice the tomatoes, onions, bell pepper, and Swiss chard into small chunks. Heat the olive oil in the bottom of a large soup pot. Cook the onions, bell pepper, and chard for a few minutes. Add the barley, water, tomato paste, and minced garlic. Bring the mixture to a boil then simmer for 30 minutes. Once the vegetables are tender, add the salt, sugar, cheese, onion powder, garlic powder, and cilantro. Stir until the cheese is incorporated and serve.
