Copycat Girl Scout Peanut Butter Sandwich Cookies

- 2 cups Flour
- 1½ tsp Baking Soda
- ½ tsp Salt
- 1 cup (2 Sticks) Unsalted Butter, room temperature
- 2 cups Creamy Peanut Butter
- 1 cup Brown Sugar
- 1 cup Granulated Sugar, plus extra for topping
- 2 Large Eggs
- 2 tsp Vanilla Extract
- 6 oz Greek Yogurt
- ½ cup Creamy Peanut Butter
- ½ cup Confectioners Sugar
Preheat oven to 350. Line baking sheets with parchment paper.
Combine flour, baking soda and salt. In another bowl beat butter, peanut butter and both sugars with electric mix until light and fluffy. Beat in eggs and vanilla. Gently fold in flour mixture until mixed well.
Make balls out of your dough and place on prepared cookie sheets. Dip a fork in granulated sugar and make a crisscross patterns in top of each ball flattening them slightly. Bake 14 minutes only until they are lightly brown around the edges. Cool. Filling: Beat all ingredients together until creamy. Spread about 1 tablespoon filling between 2 cooled cookies.
