Jambalaya is one of the easiest creole dishes to whip up. Shrimp and sausage are always an amazing combination - they’re even better mixed in a bed of rice. The sweetness of the tomato is the perfect complement to this savory dish.

  • 1 (5 oz.) pkg. yellow rice
  • 2 Tbs. olive oil
  • ½ yellow onion, chopped
  • ½ green bell pepper, chopped
  • 1 tsp. garlic, minced
  • 1 lb. spicy sausage, sliced
  • 1 (6 oz.) can tomato sauce
  • 1 lb. shrimp, deveined, peeled
  • 1½ tsp. Creole seasoning
  • ¼ C. green onion, chopped
  • salt and pepper to taste

Make the rice according to the package. In a large skillet, saute the onion, garlic, and pepper with the olive oil. In a separate skillet, cook the sausage until it’s nearly done and slice it. Add the sausage to the large skillet and finish cooking it. Add in rice and tomato sauce and let the skillet simmer. Add the seasonings and the shrimp and cook for 10-15 minutes until the dish is firm.
