Copycat La Madeleine Croque Monseiur

- 1 tbsp margarine
- 3 tbsp all-purpose flour
- 2 C. skim milk
- 1 tsp salt
- ½ tsp black pepper
- 12 oz Gruyere cheese, shredded
- 1 tbsp Dijon mustard
- 1 tbsp mayonnaise
- 8 slices thinly sliced ham
- 1 Baguette, cut into 8 slices
In a small bowl, combine the Dijon mustard and mayonnaise. Spread ¾ tsp on the outside of four of the bread slices, then layer with cheese and ham. On the other bread slices, spread the remaining mayo-mustard mixture on the topside, and just Dijon mustard on the side touching the ham and cheese.
In a shallow bowl, combine the eggs and milk and dip each sandwich in the egg wash.
Heat a nonstick griddle, skillet or grill on medium heat and coat the surface with cooking spray. Cook sandwiches for 3 minutes on each side, or until bread is lightly browned and the cheese is melted.
