Ingredients

  • 4 small fillets of cod
  • 2 eggs
  • 3 Tbs. plain flour
  • 5 oz. buttery white crackers crackers
  • 2 Tbs vegetable oil
  • 1 garlic cloves
  • ¼ C. fresh parsley leaves (1 handful)
  • ½ tsp. freshly ground black pepper
  • ½ salt
  • 4 soft rolls
  • 1 sliced tomato
  • lettuce leaves

Directions

Place the crackers, garlic, parsley, salt and pepper in food processor and pulse until smooth. Set aside into a bowl. In a separate bowl, lightly beat the eggs. Start by dipping the fish fillets in the egg mixture, drip off the excess, then roll them into the bowl of crumbs. Heat olive oil and cook the fish over medium-high heat until lightly golden, 3 to 4 minutes. Flip to the other side for another 3 minutes. Until ready to serve, keep the fillets warm, by loosely covering them with tin foil. Enjoy on soft hamburger buns, topped with tartar sauce, lettuce and tomato or skip the bread in favor of a side salad, for a lighter meal.
