  • 1 ½ lb. rigatoni pasta
  • ¼ cup Parmesan cheese
  • ½ lb. mushrooms, sliced
  • 1 lb. Greek yogurt
  • 1/2 cup spinach
  • 2 tsp. basil
  • 4 tbsp. margarine
  • 1/3 cup white cooking wine
  • Salt

Bring water to a boil in a large pot. Toss in pasta and allow cook time of about 12 minutes or until al dente. Place large pan over high heat. Toss mushrooms, margarine, and basil onto pan. Allow cook time of about 2 minutes. After the mixture has cooked thoroughly, toss in cooking wine and allow time to boil. When wine has come to a boil, toss in Greek yogurt and allow 60 seconds of cook time. Place cooked pasta and parmesan into pan and let pasta cook for about 2 minute while continuously stirring and serve.
