  • 2 C. water
  • 3 C. cups chicken broth
  • 1/4 C. olive oil, divided
  • 1/4 lb. Italian sausage, crumbled
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 2 C. grain rice
  • 1 C. dry white wine
  • 1/4 C. sun-dried tomatoes, chopped
  • 1/4 C. heavy cream
  • 2 Tbs. fresh parsley, chopped

In a large saucepan, heat water and broth until it comes to a simmer. Reduce heat to low. Heat 2 Tbs. olive oil and add sausage. Cook until browned. Heat remaining olive oil in skillet over medium heat. Add shallot and garlic. Cook until soft. Add rice and stir for 3 minutes. Add wine. Stir until dissolved. Increase heat to high. Stir in broth mixture slowly. Cook for 25 to 30 minutes. Stir in sausage and remaining ingredients.
