We love Marie Callender's potato cheese soup so much that we wanted to try making it ourselves.

  • 8 C. potatoes, peeled and cubed
  • 2 C. onions, peeled and chopped
  • 4 C. celery, chopped
  • 2 tsp. salt
  • 4 C. half and half
  • 6 Tbs. butter
  • 1 C. Cheddar cheese, shredded
  • 4 Tbs. parsley, chopped

  1. Place potatoes, onions, celery and salt in a large pot of water.

  2. Simmer until tender, about 15 minutes.

  3. Transfer to a food processor and puree until chunky.

  4. Return to pot; add half-and-half, butter and cheese.

  5. Stirring, simmer until piping hot.

  6. Garnish with parsley.

  • Yummy! I cut the recipe in half but still used 1 cup cheese. Also used fat free half and half and It is awesome! Quik and easy too!
