Ingredients

  • 2 Tbsp. olive oil
  • 1 C. minced white onion
  • 1⁄3 C. chopped celery
  • 4 tsp. minced garlic
  • 4 C. vegetable broth
  • 2 cans red kidney beans, drained
  • 1 can diced tomatoes
  • 1⁄2 C. carrot, chopped
  • 2 Tbsp. minced parsley
  • 1 1⁄2 tsp. dried oregano
  • 1 1⁄2 tsp. salt
  • 1⁄2 tsp. black pepper
  • 1⁄2 tsp. dried basil
  • 1⁄4 tsp. dried thyme
  • 3 C. hot water
  • 1⁄2 C. small shell pasta

Directions

Heat the olive oil over medium in a large pot. Cook the onion, celery, and garlic in the oil at least 5 minutes. Add the broth, tomatoes, beans, carrot, hot water, and spices to the pot. Mix well and bring to a boil. Reduce the heat to low and simmer for 20 minutes. Add the pasta and cook another 15 minutes until al dente.
