Your holiday party is not complete without these mini cheesecakes topped with cherries and blackberries. This is a different dessert you can bring to the table.

  • 1 C. graham cracker crumbs
  • 3 T. margarine, melted
  • 8 oz. cream cheese, softened
  • 1/3 C. sugar
  • 1 tsp. vanilla extract
  • 1 large egg, lightly beaten
  • bag of frozen blackberries
  • 2 cans of cherries

Preheat oven to 350 degrees Fahrenheit. Set out bag of blackberries to thaw. In a small bowl, combine graham cracker crumbs and margarine. Press gently onto the bottom of 18 paper-lined miniature muffin cups. In another small bowl, beat cream cheese, sugar, and vanilla until smooth. Add the egg and beat on low speed until combined. Spoon the mix over crusts.
Bake for about 14 minutes or until centers are set. Cool 10 minutes before removing from pan to a wire rack to cool completely. Refrigerate for at least one hour.
Remove liners and top cheesecakes with blackberries and cherries.
